-Potato soup takes on a whole new flavor when you start with baked potatoes. Think about it, boiled potatoes in variably absorbs some of their cooking water diluting their flavor. Baking them gives the potato a delicious roasted flavor and a fluffy texture. Another bonus, no peeling or chopping required.
