Quick and Easy No-Cook Mini Nacho Cups

No-cook nacho cups are an incredibly simple snack that satisfies your need for a salty treat. Easy to make for yourself or in big-batches, they're a go-to snack recipe you should save for later.

[MUSIC] Whether you're at a ballpark or having a bite at the local sports bar. Nachos are sure to be on the menu, but that doesn't mean you have to go out to have nachos. Tonight, I'm gonna show you how to make easy, mini nacho cups. First, I'll make a batch of guacamole. Cut two avocados in half, scoop out the pulp, and mash it with a potato masher. Then add an eight cup cilantro. Cilantro. Half a medium jalapenos stemmed and seeded. One clove of minced garlic. One tablespoon of lime juice. In a good pinch of salt. Stir it together, and set aside. Then, in a small bowl, toss together a quarter cup chopped cherry tomatoes. One tablespoon of finely shredded cheddar cheese and one tablespoon of thin sliced green onions. Now it's time to make nachos. Place some tortilla chips on a plate. I love these little scoop shaped ones for individual bites, but any tortilla chip will do. Then, add a scoop of guacamole to the chips. And top with a tomato mixture.
