These spring recipes come together fast (just 45 minutes or less), so make time to try them all before the season ends. Even if you've never picked up rhubarb at your farmers market or local grocery store, these five healthy rhubarb recipes will have you adding a bunch (or two) to your basket. If you missed rhubarb season, frozen rhubarb would work in a pinch. 1. Rhubarb-Bacon Jam Get the Recipe Rhubarb jam uses up extra stalks of this fresh summer veggie (yes, it's a veggie!), but many jam recipes have tons of extra sugar. But instead of using scoops of sugar, this recipe gets sweeter with a squeeze of maple syrup. Smokey bacon and tart red onion keep this healthy rhubarb recipe from becoming overly sweet, making it great for savory spreads. Andy Lyons 2. Paleo Pork and Rhubarb Skillet Get the Recipe Fresh rhubarb goes savory in this delicious Paleo dinner recipe. It has the familiar flavors of pork and apple slices, with a tart twist thanks to rhubarb. To sneak some extra veggies onto your plate, serve this healthy rhubarb recipe with cauliflower couscous instead of the traditional grain version. 3. Melty Rhubarb, Goat Cheese, and Peppers Get the Recipe Roasted rhubarb and bell peppers make a delicious (and easy!) spring side dish you can serve alongside just about any entrée. The rhubarb and peppers bake in a parchment paper ($5, Target) pack, which keeps all the juices inside, makes each bite tastier, and makes cleanup easier. To give this healthy veggie side dish a decadent touch, serve with crusty bread slices and a smear of creamy goat cheese. 4. Linguine with Garlic, Pepper, and Rhubarb Get the Recipe For a light spring pasta dinner, skip the sauce and dress up your noodles with garlic, olive oil, and plenty of fresh rhubarb. This recipe has more than three cups, so it's easy to scoop up a few slices of rhubarb in every bite. As a bonus, this fresh dinner recipe comes together in just 25 minutes, which is hard to beat. Andy Lyons 5. Strawberry Rhubarb Salsa Get the Recipe Who says salsa has to be spicy? For a healthy rhubarb recipe, try our strawberry-infused dip. The homemade salsa takes less than an hour and makes six half-pint jars ($13, Target). Share with a neighbor or save a jar for after rhubarb season ends. Was this page helpful?
