All ribs, grilled, smoked or baked, benefit from an easy extra step. It's the secret for tender results. And here's how it works. Once the ribs are about two-thirds done, take them out of the oven or off the grill. Now, wrap the racks tightly in foil, adding up to a 4th a cup of liquid to the foil packet apple juice, beer or honey work well. Then, let the wrapped ribs sit at room temp for 20 to 30 minutes. That's right. No cooking here, just rest and relaxation for you and the ribs. After resting, finish cooking the ribs in the oven or on the grill. You'll know they've hit tender perfection when you can twist 2 of the rib bones away from each other, easily separating meat from bone. Just look at that- tender juicy, and delicious.
