Orange-Simmered Pork Chops with Mango Relish

Today, we're cooking straight from the freezer. No thawing required with the recipe for orange-simmered pork chops with mango relish. We'll start by making our mango relish. In a bowl, combine mango slices, pineapple, orange segments, red onion, banana pepper, orange juice and peel and cayenne pepper. Give it all a quick stir and set it aside. Now for our pork, we're starting with individually wrap frozen pork chops. You want your chops to be between a quarter and a half-inch thick. Sprinkle the chops with chili powder, salt, and pepper. Heat oil in a large skillet and add 2 of the pork chops. Brown a couple of minutes on each side then remove them from the skillet. Repeat with the remaining chops then add the first 2 brown pork chops back to the skillet. Combine orange juice and honey in a small bowl and whisk together. We'll add that to our skillet along with a little bit of water. Reduce the heat to low and simmer for 5 to 10 minutes or until the pork chops are done. Add the mango relish to the skillet, cover and simmer 1 more minute. Remove the pork chops and mango relish from the pan and cover to keep warm. Now, we're going to simmer down our sauce. Return the skillet to medium high heat and simmer the juices uncover for 10 minutes or until reduce by half. To serve, drizzle the sauce over the pork chops and mango relish and sprinkle with fresh cilantro. Straight from the freezer to the table, dinner is served.
