Place washed jars in boiling-water canner. Remove jars from water and dry on a towel. Tip: Towels prevent jars from slipping during filling. Place lids in saucepan and cover with hot water. Do not boil. Pack food in jars using wide-mouth funnel. Follow the recipe for headspace. Release air bubbles with wood skewer. Tip: If headspace changes as bubbles are released, add more hot liquid. Wipe rims with damp paper towel. Use magnetic want to remove lids from saucepan. Place lids on jars. Screw on bands. Tip: Tighten by hand to ensure the perfect seal. Return cans to canner; don't let jars touch. Tip: Have a jar that won't fit? Refrigerate and enjoy in a few days. Cover and boil according to recipe. Pull from canner; cool on wire rack. Let jars cool 12 to 25 hours. Test the seal.
