Next time you accidentally leave salad greens in the refrigerator a couple days past their prime, turn them into a wilted greens salad.

For the best results, only cook the greens until just wilted.

Often, spinach, lettuce, and other greens that have become too droopy to use raw in a salad will taste great when cooked until wilted. Experiment with other greens (such as mustard greens, chard, or sorrel) to perfect your own version of the wilted greens salad.
