Place a fresh coconut in a heavy resealable plastic bag. Use a hammer or mallet to crack the coconut in half.
Use a spoon to pry coconut meat from the hard outer shell. Discard the shell.
Preheat the oven to 350 degrees F. Starting on one side of a large piece of coconut, use a vegetable peeler to peel off large curls of coconut.
Bake coconut curls in a single layer on a large baking sheet until curls are very light brown, about 3 to 5 minutes. Cool completely before using.
