The saucepan you use when making candy has a lot to do with the success or failure of your project. Choose a heavy-gauge pan with straight sides. Aluminum is the best heat conductor, so when shopping for a pan that is specifically for candy making, watch for hard anodized aluminum pans as well as stainless-steel pans that have an aluminum core. Pans with nonstick coating also work well, but make sure it is a heavy pan. Avoid glass, as it is not a good heat conductor.
