Slicing and Cutting Half Moons

Create masterful shapes with that cleaver.
Cut half moons by slicing the vegetable lengthwise in half.
  • To slice vegetables, hold a cleaver or chef's knife perpendicular to the vegetable and make the first cut.
  • Make each succeeding cut in the same manner. Thin slices should be no more than 1/8 to 1/4 inch thick.
  • Cut half moons by slicing the vegetable lengthwise in half.
  • Slice each vegetable half as described above, making half-circle shapes.
