Small tarts call for individual-size round tart pans for a personalized presentation. Larger-diameter round, rectangular, and square tart pans also are available. For most recipes, tart pans with removable bottoms are easier to use because they allow you to quickly and neatly transfer a baked tart to a serving plate. Cutting a large tart into serving-size pieces is also easier. Although nonstick tart pans are available, this type of pan isn't essential because most tart pastries contain a great deal of butter, so they usually don't stick to a nontreated pan.
