Making perfect risotto is easy if you follow these simple steps:
Step 1: Pick the right rice. Arborio rice is ideal because it is high in starch—which contributes to the creamy quality of risotto—and it absorbs a lot of liquid without losing its shape.
Step 2: Get toasty. Brown the rice in olive oil with the onions and garlic in a saucepan. (Don't be tempted to skip this step! This gives the risotto its terrific texture.)
