Homemade Ricotta will Change your Cooking. Combine 8 cups whole milk, 1 cup half-and-half, and 1/2 teaspoon kosher salt in a large pot. Heat to 180 degrees; stir frequently. Use an instant-read thermometer to check the temperature. Reduce the heat to medium-low and gradually stir in 1/2 cup lemon juice. Stir gently for a minute or until curds form. Remove from heat. Pour the hot curds mixture into a colander lined with a double-thickness of cheesecloth; let it drain for an hour. Gather the ricotta in the cheesecloth. Gently twist to squeeze out any remaining liquid. Refrigerate in an airtight container for up to a week. More homemade cheese recipes at BHG.com
