Use an instant-read thermometer to check the temperature. Reduce the heat to medium-low and gradually stir in 1/2 cup lemon juice. Stir gently for a minute or until curds form. Remove from heat. Pour the hot curds mixture into a colander lined with a double-thickness of cheesecloth; let it drain for an hour. Gather the ricotta in the cheesecloth.
