  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla
  • 1 cup oat flour
  • 1/4 to 1/2 cup regular rolled oats, toasted
  • 1/4 cup coconut flour, almond flour, or oat flour
  • 1 cup mix-ins (candy-coated chocolate pieces, shredded coconut, chocolate chips, and/or chopped pecans)
  • Toppings like hot fudge and/or sprinkles


In a large bowl beat butter and peanut butter with an electric mixer on medium to high speed 30 seconds. Add brown sugar, salt, and vanilla. Beat until mixture is combined, scraping sides of bowl occasionally. Beat in oat flour, rolled oats, and coconut flour. Stir in mix-ins. Add toppings as desired. Eat to your heart's content!
