The wonderful thing about frittatas is you can tailor them to please many tastes. Be creative when making a frittata. Use the basic egg mixture, but branch out with other ingredients. Some of the options are cooked meat, poultry, seafood, cheeses, fresh and dried herbs, olives, garlic, and vegetables.Grate, shred, chop, or slice into bite-size pieces all ingredients, and drain well any ingredients that come in a juice or brine, such as olives. If you're using vegetables, you may want to precook items such as zucchini, carrots, potatoes, broccoli, or mushrooms.To add more flavor, substitute chicken, beef, or vegetable broth for the milk normally used to make a frittata.
