Step 1.

1. Fold the 20 x 9-inch dough rectangle lengthwise into thirds, forming a 20 x 3-inch rectangle. Place the rectangle on a lightly floured cutting board. Starting at one end, use a cleaver or sharp knife to cut the rectangle crosswise into thin strips about 1/8 to 1/4 inch wide. You should end up with 96 strips of thin dough "threads."

2. For each bun, gently stretch a group of 8 threads from both ends until they are about 7 inches long. Starting at 1 end, wrap the threads in a spiral around the first 2 fingers of your hand, stretching the dough slightly. Use your thumb to tuck the end into the top of the spiral. At the same time, slide the bun off your fingers onto a lightly greased baking sheet.
