1. Fold the 20 x 9-inch dough rectangle lengthwise into thirds, forming a 20 x 3-inch rectangle. Place the rectangle on a lightly floured cutting board. Starting at one end, use a cleaver or sharp knife to cut the rectangle crosswise into thin strips about 1/8 to 1/4 inch wide. You should end up with 96 strips of thin dough "threads."
2. For each bun, gently stretch a group of 8 threads from both ends until they are about 7 inches long.
