First, place a metal baking pan on the bottom rack of a cold oven and add and insert too of hot tap water. To prevent splashing, add the water after the pan is in the oven. Then, close the oven door and turn it on its slowest setting ideally about 100 degrees. After mixing and kneading the dough, cover the bowl with a towel and place it in the oven on the rack above the pan of water, then close the door, turn the oven on, and let the rising begin. Resist the urge to open the door and peek inside. You wanna keep the moisture and warmth inside the oven. You also use this trick for the final rise after you've shaped the dough. Just be sure to take the pan of water and risen dough out before preheating the oven to the proper baking temperature.
