Oven-Barbecued Beef Brisket is a "pop in the oven and forget about it" dish. Make this on the weekend, and then serve leftovers during the week. Tomato Corn Muffins, Cider Slaw with Chipotle, and Lemon Curd Cookie Sandwiches make the weeknight meal quick -- you can probably prepare all three of these dishes in the amount of time it takes to reheat the brisket.
Prepare a package of corn muffins as directed, adding 1/4 cup diced tomato along with wet ingredients. Bake as directed.
Add a dash of cider vinegar and a splash of chipotle pepper sauce to coleslaw dressing. Stir into bagged coleslaw mix.
Mix equal portions jarred lemon curd and cream cheese. Fill ginger snap cookies and chill.
