Zhoug

Use this Middle Eastern herb sauce just like you would basil pesto. You can make endless variations on zhoug, but most recipes include parsley, cilantro, and a spicy bite from chile peppers.

Zhoug

Directions

  1. In a blender or food processor combine first eight ingredients (through coriander). Cover and blend or process until finely chopped, stopping to scrape sides as necessary. With blender or processor running, slowly add oil in a steady stream until combined. Add 2 Tbsp. of the pumpkin seeds. Cover and blend or process until nearly smooth.
  2. Transfer mixture to a serving bowl. Top with remaining pumpkin seeds.

Chile peppers contain oils that can irritate your skin and eyes. Wear plastic or rubber gloves when working with them.
