Zesty Green Bean Slaw

Directions

  1. In a large pot of lightly salted water cook green beans for 2 minutes. Drain and immediately transfer to a large bowl of ice water to stop the cooking; set aside.
  2. In a screw-top jar combine lime juice, fish sauce, sugar, and garlic. Cover and shake well.
  3. Drain green beans. In a large bowl combine cooked green beans, cabbage, and cilantro.
  4. Add dressing; toss gently to coat. Cover and chill up to 1 hour. To serve, sprinkle with peanuts and pepper.
