Yogurt Pancakes

Apple-cinnamon or vanilla Greek yogurt would work beautifully in (and on top of) these protein-rich pancakes.

Yogurt Pancakes

Directions

  1. In a bowl stir together 1/4 cup white whole wheat flour, 1/2 tsp. baking powder, and dash salt. In another bowl stir together 1/4 cup vanilla-flavor* fat-free Greek yogurt and 1 egg. Whisk yogurt mixture into flour mixture. (Batter will be thick.) Coat a large skillet with nonstick cooking spray. For each pancake, pour 2 Tbsp. batter onto skillet, spreading slightly with back of spoon. Cook over medium heat for 2 minutes per side. Serve with 1/2 cup apple slices cooked in 1 tsp. canola oil until golden. Sprinkle with 1/8 tsp. ground cinnamon. Drizzle with 1 1/2 Tbsp. pure maple syrup.
