  • In a small saucepan combine the water and potato. Bring to boiling; reduce heat. Cover and simmer about 10 minutes or until potato is very tender. Do not drain. Mash potato in the water. Measure potato-water mixture. If necessary, add water to equal 1 cup mixture. Discard any excess mixture. Cool slightly.

  • Add the potato mixture and remaining ingredients to a 2-pound bread machine according to the manufacturer's directions. Select the basic white bread cycle. Makes 22 servings.

Tips

Bake and cool bread. Wrap in foil and place in a large plastic freezer bag or freezer container. Seal, label, and freeze up to 1 month. Thaw overnight in refrigerator or 2 hours at room temperature. Or, place foil-wrapped frozen bread in 300 degree F oven for 25 minutes or just until warm.
