  • Grease and flour three 7-1/2x3-1/2x2-inch or two 8x4x2-inch baking pans. Set aside. In a medium bowl combine flour, soda, salt, cinnamon, and baking powder; set aside.

  • In a large bowl combine eggs, apples, sugar, oil, and vanilla. Stir in flour mixture just until moistened. Pour batter into prepared pans. Bake in a 325 degree F oven for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool on wire racks. Wrap and store overnight before slicing. Makes 30 servings.

Excellent recipe! Not sure what happened with the other two reviewers, but I found the batter easy to pour in pans and when baked a moist quick bread. Shredding the apples is key to this recipe. Delicious flavor!

3 eggs and 3/4 cup of oil is not enough  liquid to moisten 3 cups of flour.  It has the consistency of beach sand with apples in't.  I added 3/4 cup milk to get it in the range of cookie dough.. about like drop cookies.  Since the recipe says "...pour the batter..." My bread will probably not come out.  It's in the oven now, I hope it works, But there is an ingredient missing.

I've made this at least two dozen times. The batter is thick but it turns out every time. You can also substitute shredded zucchini for the apple. Love this recipe!
