Line cookie sheets with parchment paper. In a medium bowl combine flour, cocoa powder, baking soda, and salt. In a large bowl beat butter with a mixer on medium 30 seconds. Add brown sugar and espresso powder. Beat until light and fluffy, scraping bowl as needed. Beat in egg and vanilla. Alternately add flour mixture and buttermilk, beating after each addition until combined. Stir in chocolate chips. Drop dough by 1 1/2-Tbsp. portions on prepared cookie sheets. Bake about 10 minutes or until cookies spring back when lightly touched. Cool completely on cookie sheets. Spread bottoms of half of the cookies with Marshmallow Filling. Top with bottoms of remaining cookies. Roll edges in sprinkles. Marshmallow Filling In a medium bowl beat 1/2 cup softened butter with a mixer on medium 30 seconds. Beat in one 7-oz. jar marshmallow creme and 2 tsp. vanilla until combined.
