Wicked Good Whoopie Pies

This Pennsylvania Amish treat has become one of the best-loved comfort foods in Maine and was first sold commercially in this state. Soft intensely chocolate cookies are sandwiched around a fluffy marshmallow filling making them truly deserve their title of wicked good.

  • 2 cup all-purpose flour

  • ½ cup unsweetened Dutch-process cocoa powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup butter, softened

  • 1 cup packed brown sugar

  • 1 teaspoon instant espresso coffee powder

  • 1 egg

  • 1 teaspoon vanilla

  • 1 cup buttermilk

  • cup miniature semisweet chocolate chips

  • 1 recipe Marshmallow Filling

  • Colored sprinkles or jimmies or crushed striped round peppermint candies


  1. Preheat oven to 350°F. Line cookie sheets with parchment paper. In a medium bowl combine flour, cocoa powder, baking soda, and salt.

  2. In a large bowl beat butter with a mixer on medium 30 seconds. Add brown sugar and espresso powder. Beat until light and fluffy, scraping bowl as needed. Beat in egg and vanilla. Alternately add flour mixture and buttermilk, beating after each addition until combined. Stir in chocolate chips.

  3. Drop dough by 1 1/2-Tbsp. portions on prepared cookie sheets. Bake about 10 minutes or until cookies spring back when lightly touched. Cool completely on cookie sheets.

  4. Spread bottoms of half of the cookies with Marshmallow Filling. Top with bottoms of remaining cookies. Roll edges in sprinkles.

Marshmallow Filling

In a medium bowl beat 1/2 cup softened butter with a mixer on medium 30 seconds. Beat in one 7-oz. jar marshmallow creme and 2 tsp. vanilla until combined. Beat in 1 3/4 cups powdered sugar until light and fluffy.Maine/New England
