White Bean Ragout with Arugula Sauce
- In a large skillet cook tomatoes, onion, and garlic in hot oil over medium-high heat 3 to 4 minutes or until tomatoes begin to burst. Stir in beans and arugula sauce; cook about 2 minutes or until hot. Transfer to a dish; cover to keep warm.
- Wipe skillet clean. Coat the same skillet with cooking spray; heat over medium heat. Add eggs, one at a time, to skillet. Cook 4 to 5 minutes or until whites are completely set and yolks just start to thicken. Top bean mixture with eggs and the cheese.
