Beet Sage Shrub ¼ cup (2 oz.) rye whiskey 2 tablespoon (1 oz.) lemon juice Dash bitters Ice cubes ⅓ cup club soda, chilled Lemon slice and sage sprig Beet Sage Shrub 2 cup chopped peeled fresh beets 1 cup cider vinegar 1 tablespoon snipped fresh sage ⅔ cup maple syrup ½ teaspoon salt Directions In a cocktail shaker combine Beet Sage Shrub, rye, lemon juice, and bitters. Add ice cubes; cover and shake until very cold. Strain liquid into an ice-filled glass. Top with club soda. Garnish with lemon slice and sage sprig. Beet Sage Shrub In a blender or food processor combine beets, vinegar, and sage. Cover and blend or process until nearly smooth. Press through a fine-mesh sieve. Discard solids. Stir in maple syrup and salt. Cover and chill at least 24 hours. Flavor continues to improve up to 3 days. *Tip If desired, for each drink, muddle 3 fresh sage leaves in bottom of the cocktail shaker. Substitute 3 Tbsp. beet juice blend and 1 Tbsp. pure maple syrup for the shrub.
