Beet Sage Shrub

  1. In a blender or food processor combine beets, vinegar, and sage. Cover and blend or process until nearly smooth. Press through a fine-mesh sieve. Discard solids. Stir in maple syrup and salt. Cover and chill at least 24 hours. Flavor continues to improve up to 3 days.

*Tip

If desired, for each drink, muddle 3 fresh sage leaves in bottom of the cocktail shaker. Substitute 3 Tbsp. beet juice blend and 1 Tbsp. pure maple syrup for the shrub.
