Rinse and drain wheat berries. In a medium saucepan combine wheat berries, chicken broth, water, carrot, onion, Italian seasoning, and garlic. Bring to boiling; reduce heat. Simmer, covered, for 45 to 50 minutes or until wheat berries and vegetables are tender, adding the zucchini and sweet pepper the last 5 minutes of cooking. Drain mixture.
Pour dressing over salad mixture. Add tomatoes and toss to combine. Season with salt and pepper. Top with cheese. Serve warm or chill and serve cold.
