Set aside. In a large microwave-safe bowl combine chocolate, candy coating, and shortening. Microwave, uncovered, on 100% power (high) for 11/2 to 2 minutes or until chocolate melts, stirring every 30 seconds. Stir in lavender oil. Pour mixture onto the prepared baking sheet. Spread to 1/4-inch thickness. Sprinkle with violas. Chill about 30 minutes or until firm. Use foil to lift candy; break into pieces. Store between layers of waxed paper in an airtight container in refrigerator up to 1 week.
