Vegetarian Stir-Fried Rice

Directions

  1. In a wok or large heavy skillet heat oil over medium-high heat. Add celery, carrot, onion, and garlic. Cook and stir for 3 to 5 minutes or until crisp-tender.
  2. Add corn. Cook and stir for 2 minutes. Add cooked rice and soy sauce. Cook and stir about 3 minutes or until rice is heated through.
  3. Remove from heat. Stir in tomatoes and nuts. If desired, top with green onions.
