In a large skillet cook whole garlic cloves in hot oil until lightly brown; discard garlic.
Add zucchini; dried mint (if using), salt, and pepper to oil in skillet. Cook, uncovered, over medium heat about 5 minutes or until zucchini is crisp-tender, stirring occasionally.
To serve, sprinkle with cheese and fresh mint (if using). Makes 6 servings.
