  • In a large skillet heat olive oil over medium heat. Add garlic; cook 1 minute. Add greens; cover and cook about 2 minutes or until tender. Stir in salt, pepper, and vinegar. Stir in sweet pepper and rice. Serve warm. Makes 4 side-dish servings.
