In a 12-inch nonstick skillet, bring water to boiling. Add carrot; cover and cook over medium-high heat for 5 minutes.
Add fresh peas (if using); cook for 2 to 3 minutes. Add frozen peas (if using), sugar snap peas, snow pea pods, oil, orange peel, salt, and pepper.
Cook and stir for 3 to 5 minutes more or until vegetables are crisp-tender. Makes 8 servings.
