Sweet Potato-Cashew Bake
- In a small bowl combine brown sugar, cashews, salt, and ginger; set aside. In a 1 1/2 to 2-quart baking dish layer half the sweet potatoes, half the peach slices, and half the brown sugar mixture. Repeat layers. Dot with butter. Bake, covered, in a 350 degree F oven 30 minutes, stirring once. Uncover and bake 10 minutes more or until potatoes are tender. Spoon cooking juices over potatoes and peaches before serving. Makes 6 to 8 servings.

I have been making this recipe for about 25 years. Everyone who eats sweet potatoes love it. It¿s a flavorful change to the usual over the top sweet marshmallow casseroles everyone seems to make. And if I have family coming that is allergic to nuts, I just keep the cashews out and set them in a dish so people can sprinkle on what they want of the m.

Have made this for many many years, family loves it! I use less brown sugar and butter, more ginger, and in recent years, mandarin oranges to accomodate a new family member.
