Directions

  1. In a large roasting pan combine zucchini, onion, sweet pepper, mushrooms, and carrots. Drizzle with oil. Toss to coat. Spread evenly in the roasting pan. Sprinkle with salt.
  2. Roast vegetables in a 500 degree F oven 12 minutes. Remove from oven; stir in beans and tomatoes. Reduce heat to 375 degrees F. Roast, uncovered, 10 minutes more or until heated through. To serve, sprinkle with cheese. Makes 6 main-dish servings.
