In a large nonstick skillet heat oil over medium heat. Add cumin seeds and cook for 10 seconds. Add onion, garlic, coriander, and crushed red pepper. Cook and stir for 4 to 5 minutes, or until onion is tender.
Add peas and carrots. Cook and stir for 4 to 6 minutes or until carrots are tender. Stir in salt. Garnish with cilantro. Makes 4 servings.
