- In a large microwave-safe bowl combine carrot slices and the water. Cover and microwave on 100% power (high) for 6 to 9 minutes or until crisp-tender, stirring once. Transfer carrots to a bowl filled with ice water. Let stand for 5 minutes. Drain and pat carrots dry.
- In the same large bowl combine oil, vinegar, cumin, salt, coriander, and cayenne pepper. Stir in carrots, sweet onion, and cilantro; toss to combine.
- Let stand at room temperature for 1 hour. Makes 6 servings.
