  • In a mixing bowl toss beans with shallot, oil, and mint. Season to taste with salt and pepper. Cover and chill for 2 hours. Serve as a salad or side dish. Makes 4 servings.

This is a terrific recipe. I first saw it years ago when I was looking through a magazine in a doctor's waiting room. I wrote down the recipe and tried it, thinking the combination sounded interesting. It was more than interesting ... the delicate crunch of the haricots vert, the sweet bite of the shallots and the cool, high note of mint ... I did not expect to fall in love with a dish of green beans!
