This low-cal side dish recipe is ideal for a summer cookout. Haricots verts, thin sweet green beans, are available from April through July. Refrigerate them, wrapped in plastic, up to several days before using.
This is a terrific recipe. I first saw it years ago when I was looking through a magazine in a doctor's waiting room. I wrote down the recipe and tried it, thinking the combination sounded interesting. It was more than interesting ... the delicate crunch of the haricots vert, the sweet bite of the shallots and the cool, high note of mint ... I did not expect to fall in love with a dish of green beans!
