Zucchini, sweet peppers and broccoli shine in this vegetable side dish. Serve it hot or at room temperature. Stir any leftovers into hot cooked pasta for another meal.
In a Dutch oven or large kettle combine zucchini, sweet peppers, broccoli, chicken broth, garlic, basil or oregano, and pepper. Bring to boiling; reduce heat.
Simmer, covered, for 6 to 8 minutes or until crisp-tender, stirring occasionally. Stir in tomatoes. Makes 6 to 8 side-dish servings.
