Directions

  1. Lightly grease a 15x10x1-inch baking pan; set aside.
  2. Scrub potatoes thoroughly with a brush. Pat dry. Cut potatoes crosswise into slices a little more than 1/4 inch thick.
  3. In a large bowl, combine melted butter, lemon juice, basil or thyme, and pepper. Add sliced potatoes; toss gently to coat. Place potato slices in a single layer in prepared baking pan.
  4. Bake in a 450 degree F oven for 25 to 30 minutes or until potato slices are tender and bottoms are lightly browned. (For more even browning, turn potato slices over after 15 minutes of baking.) Remove from oven. Sprinkle with cheese. Let stand for 5 minutes. Transfer slices to a double thickness of paper towels to drain. Serve warm. Makes 4 servings.
