Cook onion and garlic in oil. Stir in remaining ingredients. Bring to boiling. Reduce heat; simmer, uncovered, for 35 to 40 minutes or to desired consistency, stirring occasionally. Discard bay leaf. Makes 1-3/4 cups (enough for 2 pizzas or 6 servings).
Prepare as above except reduce the chopped onion and add green pepper with onion. Omit bay leaf; add ground red pepper and chili powder with the remaining ingredients.
