Cauliflower, broccoli, mushrooms, and carrots transform into a poppable, kid-friendly treat when you coat them in buttery, cheesy bread crumbs. Serve these baked breaded vegetables as a dinner side dish or party appetizer.

Directions
- Lightly grease a 15x10x1-inch baking pan; set aside. In a plastic bag combine bread crumbs, Parmesan cheese, and pepper. In a small bowl combine egg and milk.
- Toss 1 cup of the vegetables in the egg mixture; add vegetables to the plastic bag. Close bag and shake to coat well. Place coated vegetables on the prepared baking pan. Repeat with remaining vegetables. Drizzle melted butter over vegetables.
- Bake in a 400 degree F oven about 20 minutes or until golden brown, stirring twice.
- Makes 6 servings.
