Lightly grease a 15x10x1-inch baking pan; set aside. In a plastic bag combine bread crumbs, Parmesan cheese, and pepper. In a small bowl combine egg and milk.
Toss 1 cup of the vegetables in the egg mixture; add vegetables to the plastic bag. Close bag and shake to coat well. Place coated vegetables on the prepared baking pan. Repeat with remaining vegetables. Drizzle melted butter over vegetables.
Bake in a 400 degree F oven about 20 minutes or until golden brown, stirring twice.
