Vegetable Curry

Directions

  1. In a 4- to 5-quart slow cooker combine the first 11 ingredients (through crushed red pepper). Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 hours.
  2. Stir in coconut milk. Serve mixture over rice. Top with basil and, if desired, peanuts.
