Uptown BLT

Directions

  1. Cook 2 slices lower-sodium, less-fat bacon in the microwave oven according to package directions. In a small bowl combine 1 tablespoon light mayonnaise and 1/8 teaspoon curry powder. Toast 2 slices marble rye bread; spread with mayonnaise mixture. Layer one of the bread slices with bacon, 2 slices yellow and/or red tomato, and several large fresh basil leaves. Top with the remaining bread slice, spread side down.
