Directions

  1. In a small bowl combine apple juice, hoisin sauce, ginger, salt, and cayenne pepper; set aside.
  2. In a large skillet cook sweet peppers and onion in hot oil over medium-high heat for 4 to 5 minutes or until nearly tender. Remove vegetables, reserving oil in skillet. Add turkey to skillet; cook about 4 minutes or until light brown, turning once.
  3. Return vegetables to skillet; add apple juice mixture. Bring to boiling; reduce heat. Cover and simmer for 8 to 10 minutes or until turkey is no longer pink (170 degree F).
  4. Using a slotted spoon, transfer turkey and vegetables to a serving platter; cover and keep warm.
  5. In a small bowl combine water and cornstarch; stir into liquid in skillet. Cook and stir over medium heat until thickened and bubbly. Stir in apple. Cover and cook about 3 minutes more or just until apple is slightly softened. Serve over turkey and vegetables. Makes 4 servings.
