Cut each turkey tenderloin in half horizontally to form two 1/2-inch steaks. Lightly coat the unheated rack of a broiler pan with cooking spray. Arrange turkey and pineapple wedges on rack. Broil 4 to 5 inches from the heat for 8 to 10 minutes or until turkey is done (170 degree F), turning turkey and pineapple once.
To serve, place the lettuce on dinner plates. Cut turkey into thin bite-size slices. Arrange turkey slices, pineapple, jicama, and carrot on top of lettuce.
For dressing, in a small bowl stir together yogurt, pineapple juice, curry powder, and pepper. Drizzle the dressing over salads. Makes 2 servings.
