4 burritos

  • 8 8 inch flour tortillas

  • 12 ounce uncooked ground turkey

  • 1 cup chopped onion (2 medium)

  • 2 cloves garlic, minced

  • 1 15 ounce can black beans or pinto beans, rinsed and drained

  • ½ cup salsa

  • 2 teaspoon chili powder

  • ¼ cup shredded cheddar cheese (1 ounce)

  • ¼ cup shredded lettuce

  • Salsa (optional)

  • Dairy sour cream (optional)

  1. Preheat oven to 350°F. Stack tortillas; wrap in foil. Heat in the oven for 10 minutes to soften.

  2. Meanwhile, for filling, in a large skillet, cook turkey, onion, and garlic over medium heat until meat is brown and onion is tender. Drain off fat. Stir in beans, the 1/2 cup salsa, and the chili powder. Heat through. Reserve half of filling mixture (about 2 cups) and half of the tortillas (4) for Curry Burritos.

  3. Spoon about 1/3 cup of the remaining filling onto each remaining tortilla and top each with 1 tablespoon cheese and 1 tablespoon lettuce. Fold bottom edge up and over filling, just until covered. Fold in opposite sides. Roll up, tucking in sides.

  4. If desired, serve burritos with additional salsa and dairy sour cream.
