These green bowls are topped with fresh pineapple, toasted coconut, and mint for a fresh take on breakfast.

Ingredients

  • 2 cup fresh or frozen cubed mango

  • 1 medium banana, frozen if desired*

  • ¾ cup chopped fresh pineapple

  • 1 cup unsweetened light coconut milk

  • 1 - 2 cup lightly packed fresh baby spinach

  • 2 tablespoon honey

  • 1 cup chopped fresh pineapple

  • ¼ cup chopped macadamia nuts

  • ¼ cup unsweetened raw chip coconut, toasted

  • 2 - 3 tablespoon crystallized ginger, chopped

  • 8 teaspoon chia seeds

  • Small fresh mint leaves (optional)

Directions

  1. In a blender or food processor combine first six ingredients (through honey). Cover and blend until smooth, scraping sides of container as needed. Pour mixture into four serving bowls. Top evenly with remaining ingredients.

*Tip

To freeze banana, peel banana and cut into 1-inch-thick slices. Place on a tray lined with waxed paper. Cover loosely with plastic wrap; freeze 1 to 2 hours or until firm. Or transfer frozen banana slices to an airtight container; freeze up to 3 months.
