  • In a medium bowl stir together flour, ground ginger, baking soda, cinnamon, cloves, and 3/4 tsp. salt. Stir in crystallized ginger.

  • In a large bowl beat shortening and butter with a mixer on medium 30 seconds. Add brown sugar and beat until combined, scraping bowl as needed. Beat in egg and molasses. Beat in flour mixture. Chill, covered, 1 hour or until dough is easy to handle.

  • Preheat oven to 350°F. Lightly grease two cookie sheets. Place Ginger Sugar in a small bowl. Shape dough into 1-inch balls. Roll balls in Ginger Sugar to coat. Place 1 1/2 inches apart on prepared cookie sheets.

  • Bake 10 to 12 minutes or until edges are set. Let cool on cookie sheets 1 minute. Let cool on wire racks. Makes 48 cookies.
