Triple-Ginger Cookies

Ingredients

  • 2 cup all-purpose flour

  • 1 ½ teaspoon ground ginger

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ¾ teaspoon salt

  • ½ teaspoon ground cloves

  • ½ cup finely snipped crystallized ginger

  • ½ cup shortening

  • ¼ cup butter, softened

  • 1 cup packed light brown sugar

  • 1 egg

  • ¼ cup dark molasses

  • ¾ cup Ginger Sugar or granulated sugar

Ginger Sugar

  • ¼ cup coarsely chopped fresh ginger

  • ¾ cup granulated sugar

Directions

  1. In a medium bowl stir together flour, ground ginger, baking soda, cinnamon, cloves, and 3/4 tsp. salt. Stir in crystallized ginger.

  2. In a large bowl beat shortening and butter with a mixer on medium 30 seconds. Add brown sugar and beat until combined, scraping bowl as needed. Beat in egg and molasses. Beat in flour mixture. Chill, covered, 1 hour or until dough is easy to handle.

  3. Preheat oven to 350°F. Lightly grease two cookie sheets. Place Ginger Sugar in a small bowl. Shape dough into 1-inch balls. Roll balls in Ginger Sugar to coat. Place 1 1/2 inches apart on prepared cookie sheets.

  4. Bake 10 to 12 minutes or until edges are set. Let cool on cookie sheets 1 minute. Let cool on wire racks. Makes 48 cookies.

Ginger Sugar

  1. In a small bowl, stir together 1/4 cup coarsely chopped fresh ginger and 3/4 cup granulated sugar. Let stand 1 hour (sugar will clump slightly from moisture in ginger). Place mixture in a fine mesh sieve set over a bowl; stir gently so sugar will be separated from ginger. Discard ginger.
