Ingredients

  • 24 chocolate sandwich cookies with white filling

  • cup butter, melted

  • ½ cup butter, softened

  • 1 4-serving-size pkg. chocolate instant pudding and pie filling mix

  • ¾ cup heavy cream

  • 3 cup powdered sugar

  • 8 ounce bittersweet or semisweet chocolate, chopped

  • 2 tablespoon shortening

  • Grated bittersweet or semisweet chocolate (optional)

Directions

  1. Preheat oven to 325°F. Line a 13x9-inch baking pan with foil, extending foil over edges. Lightly grease foil.

  2. For crust, place cookies in a food processor. Cover and process until fine crumbs. In a medium bowl stir together cookie crumbs and melted butter. Press mixture evenly into the prepared baking pan. (Use the bottom of a 1/2-cup dry measuring cup to press cookie mixture evenly into pan.) Bake 15 minutes. Cool in pan on a wire rack about 30 minutes or until completely cooled.

  3. For filling, in a large bowl beat softened butter with a mixer on medium 30 seconds. Add pudding mix and cream; beat until smooth. Gradually beat in powdered sugar. Beat on medium to high 1 to 2 minutes or until light and fluffy. Carefully spread filling over crust.

  4. For topping, in a medium bowl combine chocolate and shortening. Microwave about 1 minute or until nearly melted, stirring once. Stir until smooth. Carefully spread over filling. Cover and chill about 2 hours or until firm. Use foil to lift out uncut bars. Cut into bars. If desired, garnish with grated chocolate.
