Tomatillo-Watermelon Salad

  • 4 cup 1-inch cubes seedless watermelon

  • 2 avocados, halved, seeded, peeled, and cut into 1-inch pieces

  • 4 tomatillos, husked and thinly sliced

  • 1 small red onion, halved and thinly sliced

  • 1 cup crumbled queso fresco (4 ounces)

  • ¼ cup olive oil

  • 3 tablespoon lime juice

  • 2 tablespoon sherry vinegar

  • 1 tablespoon finely chopped fresh jalapeño chile pepper*

  • 1 teaspoon sugar

  • 1 teaspoon snipped fresh mint

  • ¼ teaspoon salt

  • ¼ teaspoon ground coriander

  • 2 tablespoon snipped fresh cilantro

  • 2 tablespoon snipped fresh chives


  1. In an extra large bowl combine watermelon, avocados, tomatillos, and onion. Add queso fresco; toss gently to combine.

  2. In a screw-top jar combine oil, lime juice, vinegar, jalapeño, sugar, mint, salt, and coriander. Cover and shake well until sugar and salt dissolve. Drizzle over watermelon mixture; toss gently to combine. Sprinkle with cilantro and chives. Serve immediately.


Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
